Ceylon cinnamon - a noble spice
Ceylon cinnamon [Latin: Cinnamomum verum], also known as true cinnamon, is the most precious variety of cinnamon. Although other varieties are available on the market, including Chinese cinnamon (Cinnamomum cassia), which is the most common due to its low price, it is Ceylon cinnamon that is of premium quality. Archaeologists confirm that cinnamon was known as early as 4000 BC, and the first references to this spice were found in a Chinese herbal book dating back to 2700 BC. Ceylon cinnamon originates from two exceptionally sunny islands: Ceylon and Madagascar. The spice is extracted from the bark of the Ceylon cinnamon tree, an evergreen tree that can reach up to 10 meters tall.
Ceylon cinnamon in cooking
Thanks to its unique aroma, Ceylon cinnamon is an essential ingredient in many dishes. Cinnamon enriches the taste of many sweet desserts, cakes, or baked apples. It owes its characteristic properties to the cinnamon oil content, which is also widely used on its own. In European cuisine, cinnamon is associated with sweets, but in Indian and Middle Eastern cuisine, it is commonly used in savory and spicy dishes.
