Celery (Apium L.) is a plant of the celery family consisting of about 19 species. Most of them grow in South America, only celery (Apium graveolens L.) is widespread - it is found wild in Europe, it is also widely cultivated, also in Poland.
Celery, due to its pronounced aftertaste, is used as a spice and is also an excellent addition to meat and vegetable dishes. It is one of the lowest-calorie vegetables, contains twice as much vitamin C as citrus fruits, and is also an excellent source of riboflavin, calcium, vitamin B6, magnesium, phosphorus, potassium, vitamins A and K, and dietary fiber.
Celery is the healthiest raw vegetable, but only heat treatment brings out its unique flavor. To retain as much nutritional value as possible, it's best not to simmer it. Instead, steam the vegetables.
