Xylitol, corn sugar - table sweetener. Xylitol is a plant-based sweetener. It is found naturally in raspberries, strawberries, plums, and even cauliflower. Finnish xylitol is derived from birch. The term xylitol itself can refer to other fruits and vegetables. It is most commonly produced from corn. Depending on the product from which it is obtained, we have different methods of production. Birch sugar is produced by fermentation by bacteria and yeasts. In contrast, corn sugar is produced by hydrolysis of biomass. It has the appearance and sweetness of regular sugar, but contains 40% fewer calories. In addition, it has a very low glycemic index (GI = 8), so it does not cause spikes in blood sugar and insulin levels. 1 gram represents only 2.4 calories. Its glycemic index is only 8, for comparison, traditional sucrose is GI = 70 and glucose is as high as GI = 100. Therefore, it works well as a sugar substitute for people who should exclude high glycemic index products from their diet and do not want to give up sweetening coffee, tea or sweet snacks and cakes.

Xylitol also facilitates the absorption of calcium, so it is beneficial for people suffering from deficiencies to include it in their diet. However, it has a drawback: when consumed in excess, it can cause purgations, so it is worth monitoring the amount consumed during the day.
