Shiitake (Lentinula edodes (Berk.) Pegler), also known as quickies or Japanese hard worms, are edible mushrooms belonging to the Omphalotaceae family of the order Mushrooms. These mushrooms, native to the Far East and distant relatives of mushrooms, are called in Japan "the elixir of life" due to their beneficial effect on the human body.
Shiitake mushrooms are world-renowned for their immune-boosting compound lentinan. The edible cottage cheese is also a source of valuable B vitamins and minerals—manganese, zinc, phosphorus, potassium, calcium, iron, and magnesium—as well as fiber and vitamin D.
Adding shiitake mushrooms is a great way to diversify the flavor of a dish and add their unique aroma. They are perfect as an addition to soups, sauces, or as an ingredient in dumpling filling.
