DESCRIPTION

Spelt is an ancient variety of wheat. Spelt grains mature in thick husks that protect them from impurities. Spelt can be ground to produce whole spelt flour, suitable for making bread and cakes. Cooked and blended spelt makes an excellent base for cutlets and pasta.

PREPARATION METHOD

Cook the spelt, previously soaked for several hours and rinsed, in fresh salted water in a 1:3 ratio (1 portion of spelt to 3 portions of water) for about 90 minutes.
