Erytrol and erythritol are interchangeable names for the same product. It is a low-calorie natural sweetener that belongs to the group of polyhydroxy or sugar alcohols. It is found naturally in fruits such as melons, pears, and grapes, as well as in corn, algae, lichen, and red wine.
It is obtained in industry by fermentation, the same process as in cheese making, but fruit is used instead of milk. Another method of production is the use of glucose and various species of yeast or glycerol, also with the use of microorganisms, in this case Yarrowia lipolitica.
Erythritol has a slightly sweet taste. When consumed, it leaves the mouth feeling slightly cool. It has a zero glycemic index and therefore does not raise blood sugar levels. 1g of erythritol only contains about 0.2 kcal, which is why it is called a "zero-calorie sweetener." Among the sweeteners available, it is the lowest-calorie option, with virtually no nutritional value, making it ideal for those who are controlling calories or reducing their intake.
It is used for cooking and baking, thus reducing the calorie content of prepared meals. After ingestion, it is quickly eliminated from the body. It can be used by diabetics. The advantage of this product is that it does not have a laxative effect when consumed even in large quantities. Erythritol is not metabolized by our body because we do not have an enzyme to break it down in our body. It is almost completely excreted and does not affect the intestinal flora in any way. It can be used as a substitute for traditional sugar, which closely resembles its appearance. It is perfect for sweetening coffee, tea, desserts, and as an ingredient in cakes. Erythritol, however, is less sweet, having about 60-70% of the sweetness of sucrose (sugar), which is worth considering in recipes when replacing these products.
Erythritol has a positive effect on our body by acting as an antioxidant and tooth protector. As an antioxidant, it combines with free radicals and protects our body from their harmful effects. It also has the ability to inhibit sugar fermentation, which occurs by bacteria of the genus Streptococcus, which can cause tooth decay.
In food, erythritol is increasingly used in the production of healthy sweets, jams, candied fruits, chewing gum and the production of dietary supplements for people who have to exclude sugar from their diet. It not only acts as a sweetener, it is also used as a flavor enhancer, during thickening and as a substance that prevents changes in consistency, color and taste of the product.

When replacing sugar with erythritol, we should use the proportion: replace 5 g of sugar with approximately 7 g of erythritol.
It is often added to other sweeteners, such as aspartame, in products to eliminate their unwanted aftertaste and improve their sweetness. In cosmetics, it is used as a replacement for glycerin, which acts as a preservative, i.e., protects the product from spoilage.
