Millet is considered the oldest cereal. It is obtained from millet seeds, already cultivated in the Neolithic period, by hulling the grains of this cereal.
Millet contains little starch but plenty of easily digestible protein. It is distinguished by the highest content of B vitamins: B1 (thiamine), B2 (riboflavin), and B6 (pyridoxine), as well as iron and copper. It is easy to digest and does not cause allergies because it does not contain gluten. It has antiviral properties and reduces inflammation of the mucous membranes, making it a good home remedy for a runny nose.
Millet contains silica, which has a beneficial effect on hair, skin, and nails. Silicon also plays an important role in bone mineralization and metabolism. Millet also provides large amounts of vitamin E and lecithin, which have a beneficial effect on memory and concentration, and regulates blood cholesterol levels.

HOW TO USE
Rinse the millet in cold water. Boil it in salted water in a ratio of 1 cup of groats to 2 cups of water. Remember not to stir the grains during cooking. If you have a saucepan with a thick bottom, you can remove it from the heat earlier and the grains will be covered in a few minutes.
