Roasted buckwheat is a great addition to a main course. It pairs well with meat and vegetables. It's also ideal for making soups and can be used as a filling for dumplings and croquettes. It's also delicious as a side dish for meat or vegetarian cabbage rolls.
Add the buckwheat to lightly salted boiling water. The ratio of grains to liquid should be 1:2. Cook for 10-15 minutes, stirring regularly. After this time, turn off the heat and leave the groats in a covered saucepan for a few minutes, until all the water has been absorbed. For greater fluidity, you can add a tablespoon of oil to the water.
