Natto is a traditional dish that has been popular in Japan for generations due to its beneficial properties. It is produced by fermenting soybeans using a strain of Bacillus subtilis natto bacteria. The history of its preparation dates back nearly 1,000 years!

Quite recently, researchers discovered that natto contains a unique enzyme - nattokinase - which exhibits fibrinolytic activity. However, it turned out that due to its low concentration and the presence of a number of other substances, it is extremely difficult to isolate pure nattokinase from natto.
