Organic tapioca is obtained from cassava root tubers. This shrub is currently cultivated in Brazil, Mexico, as well as India, Bolivia, and Paraguay, where it is one of the main sources of starch. The grains and flour made from them are the basis of many traditional dishes and have recently become a popular addition to Asian desserts. Cassava starch has no characteristic aftertaste or odor and therefore does not affect the final taste of prepared dishes. Tapioca is particularly recommended for baking cakes, bread, pastries, and biscuits. It pairs perfectly with fruit and plant-based milks (e.g., coconut). It can also be used as a base for jelly, puddings, dairy products, and fruit-based products. It is also ideal as a thickener for soups, sauces, and mousses. Certified gluten-free organic cassava starch is an excellent substitute for wheat flour and potato starch. It's a good alternative for people with food intolerances, as well as vegans and vegetarians.
