Organic tapioca is obtained from cassava root tubers. This shrub is currently cultivated in Brazil, Mexico, as well as India, Bolivia, and Paraguay, where it is one of the main sources of starch. The cereal and flour made from it are the basis of many traditional dishes and have recently become a popular addition to Asian desserts. Cassava starch has no characteristic aftertaste or odor and therefore does not affect the final taste of prepared dishes. Tapioca is particularly recommended for baking cakes, bread, pastries, and biscuits. It pairs perfectly with fruit and plant-based milks (e.g., coconut). It can also be used as a base for jelly, puddings, dairy products, and fruit-based products. It is also perfect as a thickener for soups, sauces, and mousses.
