Vitamin A - Scientific evidence suggests vitamin A plays an anticancer role. Vitamin A deficiency can lead to fetal malformations, developmental and growth difficulties, and hypersensitivity to infections. Retinol is found primarily in animal foods, liver, cheese, butter, eggs, and milk. However, vegetables contain carotenoids, particularly orange, yellow, and red fruits and vegetables such as tomatoes, carrots, apricots, watermelons, and blueberries. Most vitamin A is lost during cooking.

Vitamin E is an antioxidant that helps maintain cell integrity. It oxidizes and decomposes easily under the influence of light and heat, i.e., during cooking and the refining of vegetable oil. It is mainly found in fatty fruits such as olives, wheat germ, and seeds. Vitamin E deficiency, usually associated with malnutrition, leads to general malnutrition disorders, including disorders of the nervous system and general metabolism.

Vitamin D is a regulator of calcium metabolism and therefore also promotes good bone mineralization. Most vitamin D is synthesized by the body when exposed to sunlight, starting with cholesterol derivatives present in the skin. Vitamin D deficiency leads to a risk of rickets in children, resulting in bone deformity and growth inhibition, and osteomalacia in adults, an intense form of bone decalcification.

Vitamin K plays a very important role in blood clotting. A deficiency, which rarely occurs as a result of diseases that prevent intestinal absorption or prolonged antibiotic treatment, therefore leads to bleeding. Sources of vitamin K are vegetables, especially kale, spinach, and liver.
