Xylitol is primarily birch sugar, but it can also be obtained from other plant products. It is a derivative of xylose, a polyhydroxy or sugar alcohol. Its structure stimulates the sweet taste receptors on the tongue.
It occurs naturally in raspberries, strawberries, plums, and even cauliflower. Finnish xylitol is derived from birch. The term xylitol itself can refer to other fruits and vegetables. It is most commonly produced from corn. Depending on the product from which it is obtained, we have different methods of production. Birch is produced by fermentation with bacteria and yeasts. On the other hand, corn xylitol is produced by hydrolysis of biomass.
In food, xylitol is most commonly found in chewing gum and candy. It is increasingly used as a sugar substitute in healthy versions of sweets and pastries. It is perfect for sweetening coffee, tea, smoothies, desserts, and ice cream. It is resistant to high temperatures, so we can safely replace sugar in recipes with xylitol.
The presence of xylitol in gum is not accidental. When consumed, xylitol does not ferment with bacteria, and therefore no acid is produced that has a negative effect on enamel. It also lowers the pH of the oral cavity and increases saliva production, which has a positive effect on the condition of our teeth. Xylitol also facilitates the absorption of calcium, so it is worthwhile for people suffering from deficiencies to include it in their diet. However, it has a drawback: when consumed in excessive quantities, it can cause laxity, so it is worth controlling the amount consumed throughout the day. Xylitol, which resembles sugar and even has a similar sweetness, is distinguished primarily by its caloric content. Its calorific value is much lower, even up to 40%. 1 gram represents only 2.4 calories. Its glycemic index is only 8, for comparison, traditional sucrose has a GI of 70, and glucose has a GI of 100. Thanks to this, xylitol does not raise our blood sugar as much as traditional sugar. Therefore, it works well as a sugar substitute for people who need to exclude high glycemic index products from their diet and do not want to give up sweetening coffee, tea, or sweet snacks and cakes.
