Sprouted seeds are said to be a vitamin bomb. And for good reason. During germination, the ingredients stored in the seed are converted into substances easily absorbed by the body—vitamins and minerals, nutritional proteins, enzymes, and unsaturated fatty acids. Sprouts are a storehouse of valuable nutrients and contain almost no calories. You can add them to salads, soups, cottage cheese, or sprinkle them on sandwiches. It's best to eat them raw, as they are the most valuable then. Only legume sprouts should be scalded with boiling water.
